what's cookin'?

Yesterday, I found myself craving for some Thai bagoong (shrimp paste) rice and I suddenly remembered a recipe that I'd bookmarked on my laptop for Thai pineapple fried rice which uses shrimp paste, too. I checked out the ingredients and saw that I had everything except for shrimp. Luckily, my husband and my little boy were going on a quick trip to the Filipino market so I asked him to buy me half a kilogram of shrimp so I could go ahead and satisfy my hungry tummy. J wasn't too excited about it though because he couldn't quite imagine what the finished product would taste like.

The fried rice was quick and easy to prepare (I made quadruple the recipe) which I loved because I have little patience for anything too complicated. I rinsed the shrimp paste once to lessen its saltiness and although I had a can of cashew nuts, I decided not to add it in since it was salted. And the result? Husbo couldn't get enough of it and finished off the leftover, which was supposed to be my sister's share, for breakfast today.
